Beef with tamarind
Ingredients
- 500g Scottish beef - slice it into thin strips
- 4 cloves of garlic
- 1 1/2 tsp black peppercorn
- 1 1/2 tsp corriander seed
- 2 tbsp light soy sauce
- 2 tbsp sweet sticky soy sauce
- 2 tsp dark brown sugar
- 3 tbsp tamarind paste
- 2 tbsp vegetable oil
- 100ml water
- 2 tbsp oyster sauce
Put the garlic, black peppercorns and corriander seeds into pestle and mortar, and smash them into a find paste.
Marinate the beef with this paste, light soy sauce, sweet sticky soy sauce, dark brown sugar and tamarind paste. Cover and leave in the fridge for 1 hour.
Heat the oil in the wok, put in the marinated beef and all the marinated sauce. Stir well for about 1-2 minutes. Put in water.
Bring up to boil and taste it. Put in oyster sauce and stir well.
Leave it to boil hard, reduce the liquid until only the thick sticky sauce remains.
