Chicken with garlic and black pepper
Ingredients
- 3 pieces of skinless chicken breast - cut into small strips
- 6 cloves of garlic
- 1 1/2 tsp black peppercorn
- 2 tbsp light soy sauce
- 2 tbsp vegetable oil
- 100ml water
- 1/2 tsp caster sugar
- 2 tbsp oyster sauce
- 2 tbsp fresh chopped corriander leaves
Put the garlic and black peppercorns into pestle and mortar, and smash them into a fine paste.
Marinate the chicken with this paste and light soy sauce. Cover and leave in the fridge for 30 minutes.
Heat the oil in the wok, put in the marinated chicken and all the marinated sauce. Stir well for about 1-2 minutes. Put in water.
Bring up to boil and taste it. Put in oyster sauce and sugar and stir well.
Leave it to boil hard, reduce the liquid until only the thick sauce remains.
Put in corriander leaves, stir well and turn off the heat
